Cannelloni with soya mince, tomato sauce and Virgilliant Extra Virgin Olive Oil

 

Our vegetarian proposal! Soya mince is a  food product with a huge potential regarding recipes. Here is a delicious recipe of cannelloni with mince of soya instead of meat mince. Let’s go veggie today!

Ingredients

-1 packet of soya mince(without fat) 500 gr

-1 packet of cannelloni 250 gr (choose a packet that no precooking is needed)

-6-7 tablespoon of Virgilliant Extra Virgin Olive Oil

-2 big onions, (sliced)

-6 flares of garlic (sliced)

-750ml of tomato juice or minced tomato

-50ml red wine

-Cheese (optional)

 -Salt

-Pepper

-Oregano

Step by step…

For every cup of soya mince add 3 cups of water. Soak the soya mince in boiling water and boil it for 20 minutes. Then rinse it and press it in order to remove as much water as you can. After that,  soya mince is ready to be handled as meat mince.

In a big pan heat two table spoon of Virgilliant Extra Virgin Olive Oil, the sliced onions, 4 sliced garlic flakes, the soya mince, 250ml tomato juice, 50ml of red wine, salt and pepper. Stir and fry for about 15-20 minutes until soya mince has little moisture and looks like original meat mince. Add oregano, mix well and cool it.

When the mix is cooled, in a baking tray pour a couple of table spoons of Virgilliant Extra Virgin Olive Oil to the whole surface so that it forms a thin layer. Fill each cannelloni with soya mixture and place it carefully side by side. For the tomato sauce, in saucepan mix 500ml tomato juice, two table spoon of Virgilliant Extra Virgin Olive Oil, two sliced garlic flakes, salt and pepper. Pour the tomato sauce into the baking tray with the cannelloni. Tomato sauce must cover the cannelloni, if not, add some water. Cover the baking tray with aluminum foil and bake it in a hot oven  for 40 minutes approximately. Then remove the aluminum foil, add some cheese on top of the cannelloni (optional) and bake for 5 more minutes.
